The word tapa actually means lid, and it comes from the slices of bread that innkeepers in Spain would place on top of a guest’s wine glass to keep it free of dust and/or flies between sips. The practice of balancing some kind of small food on top of the bread began and tapas were born. Today in Spain, it is becoming popular to serve tapas on toothpicks without the bread. This style is called “pinchos.”
